cranberry, oatmeal & cinnamon scones

delicious disaster

here is what i made yesterday. & while they didn't turn out right, they were still tasty. next time i try this recipe, i will use the appropriate cutter (i don't currently have any, so used a glass that was too big) & i won't roll the dough so thin!


cranberry, oatmeal & cinnamon scones
(makes about 10 scones)

175g self-raising flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
75g unsalted butter, diced
75g caster sugar
50g oatmeal, plus extra for sprinkling
75g dried cranberries
5 or so tablespoons of milk
milk to glaze

1. put flour, baking powder & cinnamon in bowl with butter & rub until it resembles breadcrumbs. add sugar & oatmeal & mix.
2. add cranberries & milk & mix until a soft dough forms. add more milk if necessary.
3. roll out dough to 1.5cm thick on a lightly floured surface. cut out scones with a 5cm cutter & place on a lightly greased baking sheet, using trimmings until used up.
4. brush top with milk & sprinkle with oatmeal. bake in pre-heated over at 220˚c (i did 190˚c in fan oven) for 10-12 minutes until risen & golden.
5. scone + butter + jam = yum.

Oouuuh my brother brought me a full bag of cranberries and I don’t really know what to do with it, UNTIL NOW.
